Produced by Jamison Savage in Panama, this coffee underwent a process called carbonic maceration followed by a washed fermentation.
Carbonic maceration involves placing whole cherries in a stainless steel tank and letting them rest in a carbon dioxide-rich environment.
This processing method allows for a refined aromatic complexity while preserving a beautiful clarity on the palate.
