This low-caffeine coffee is produced through a careful selection of ripe cherries, sorted by density after disinfection.
Decaffeination begins by soaking the beans in hot water (80°C) to open their pores, followed by three baths using a natural solvent extracted from coffee pulp, which removes about 95% of the caffeine while preserving the aromas.
This is followed by a controlled fermentation lasting 96 hours with yeast from previous lots, at 18°C, to enrich the aromatic profile.
The result is a surprisingly expressive coffee, with pleasant acidity and fruity notes.
