This coffee from the Granja La Esperanza farm offers a cup full of sweetness and complexity, with notes of cherry liqueur, pineapple and passion fruit, a creamy body, and a pleasant acidity on the finish.
A complex coffee that combines intensity with velvety sweetness.
Fermentation process description:
For the fermentation of the green coffee, only the ripest cherries are hand-selected and immersed to filter out the lighter and less flavorful beans.
After measuring the natural sugar content, they are carefully fermented in GrainPro bags for 70 hours.
With gentle rotation every 5 hours, each cherry absorbs its aromatic essence, enhancing its natural acidity and fruity notes.
The cherries are then mechanically dried for 3 days at a controlled temperature of 38–40 °C.
They complete the process with natural drying on raised beds for 12–15 days, developing richness and complexity.
